Beet Fire Brew Potato Latkes

Add shredded beet traditional potato latkes for a colorful variation on the classic!

Ingredients:

  • 3 large russet potatoes, peeled and grated
  • 2 red beets, peeled and grated
  • 1 small onion, grated
  • 1 egg, beaten
  • 3 tbsp Beet Fire Brew
  • 3 tbsp gluten-free matzo meal
  • 1 tsp salt
  • ½ tsp pepper

Instructions:

  • Squeeze excess moisture from grated potatoes, beets and onions.
  • Mix potatoes, beets, onions, egg, Beet Fire Brew, matzo meal, salt, and pepper.
  • Preheat the oven to 400°F or 425°F.
  • Lightly grease two baking sheets, and drop the batter onto the sheets in 1/4–1/3 cup portions. Flatten the latkes.
  • Bake for 10 minutes, then flip and bake for an additional 10–12 minutes.
  • Serve immediately with chutney recipe and sour cream
