Add shredded beet traditional potato latkes for a colorful variation on the classic!
Ingredients:
- 3 large russet potatoes, peeled and grated
- 2 red beets, peeled and grated
- 1 small onion, grated
- 1 egg, beaten
- 3 tbsp Beet Fire Brew
- 3 tbsp gluten-free matzo meal
- 1 tsp salt
- ½ tsp pepper
Instructions:
- Squeeze excess moisture from grated potatoes, beets and onions.
- Mix potatoes, beets, onions, egg, Beet Fire Brew, matzo meal, salt, and pepper.
- Preheat the oven to 400°F or 425°F.
- Lightly grease two baking sheets, and drop the batter onto the sheets in 1/4–1/3 cup portions. Flatten the latkes.
- Bake for 10 minutes, then flip and bake for an additional 10–12 minutes.
- Serve immediately with chutney recipe and sour cream
