Detox Turmeric Lentil Soup with a Citrus Kick

A nourishing soup loaded with fiber, plant-based protein, and detoxifying spices.

Ingredients

  • 1 tablespoon avocado oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped turnip or potato
  • 2 1/2 cups chopped sweet potato
  • 2 minced garlic cloves
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 1 cup green or brown lentils
  • 1 cup red lentils
  • 2 tablespoons turmeric powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup almond milk
  • 1 cup spinach
  • 1 cup fresh parsley
  • 1 teaspoon lemon juice
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons Citrus Fire Brew

Instructions

  • 1. Heat avocado oil in a large stockpot or dutch oven. Sauté onions, celery, turnip, potato, and sweet potato for about 5 minutes.
  • 2. Add garlic, salt, pepper, and thyme, and cook for 2 minutes.
  • 3. Stir in lentils, turmeric, ginger, and cumin, then add broth and water. Bring to a boil, reduce to a simmer, and cook for 30 minutes.
  • 4. Remove from heat and stir in almond milk, spinach, parsley, lemon juice, and Citrus Fire Brew. Serve warm with a sprinkle of red pepper flakes.
