Ingredients:

1/2 cup golden raisins

1 tbsp Citrus Fire Brew

1 tbsp maple syrup

About 6 carrots

1-2 scallion, chopped

Olive oil

Cumin
-
Salt

Pepper

1/3 cup sliced almonds

1 tbsp butter
Instructions:

Mix golden raisins, maple syrup, scallions and Fire Brew in a small bowl. Set aside.

Peel carrots and lay them on a baking sheet. Drizzle with olive oil and sprinkle with cumin, salt, and pepper to taste. Bake at 425°F (220°C) for 20-25 minutes or until the carrots are tender.

In a pan on the stovetop, melt the butter and add the sliced almonds. Cook for about 3 minutes until the almonds are lightly toasted. Remove from heat.
